Abstract

<p>Poultry development stands as a crucial facet of animal husbandry in India, with the country ranking third globally in egg production. While achieving notable growth, the challenge remains to enhance egg production in rural and arid regions, particularly focusing on preserving egg quality. Despite India's status as a major egg producer, the per capita consumption in rural areas lags behind urban counterparts, emphasizing the need for strategies to address quality concerns. This study explores the impact of storage conditions on egg quality, considering factors such as cleanliness, freshness, egg weight, shell quality, yolk index, albumen index, Haugh unit, and chemical composition.</p> <p>In rural India, where consistent electric supply remains a challenge, backyard poultry farmers often store eggs under ambient environmental temperatures. The consequences of such storage practices on egg quality, especially in the absence of proper refrigeration, necessitate careful consideration. Understanding the changes that occur during egg storage is crucial for devising effective preservation strategies.</p> <p>Chicken eggs, recognized for their nutritional richness, encompass essential proteins, fats, carbohydrates, and energy. To maintain the nutritional value and cooking characteristics, it becomes imperative to store eggs under proper conditions until consumption or sale. This study delves into the complexities of egg quality preservation in challenging rural environments, offering insights into storage practices to mitigate adverse effects on egg characteristics.</p> <p>The findings contribute to the broader understanding of egg quality preservation in resource-constrained settings, particularly in rural India. By addressing the storage challenges and their impact on egg quality, this research seeks to pave the way for improved practices that enhance the overall egg production landscape.</p>
